The Easy Way to...Caramelize Onions
What you’ll need:
- Mandolin (or a sharp knife, cutting board, and steadier hands than mine)
- 1 large sweet yellow onion
- Large skillet
- Spatula
- ¼ c bacon grease, ghee, or butter
- 1 - 2 T honey (optional)
1. Peel onion and slice thinly, about 1/4 to about 1/3 inch (I usually use the thickest setting on my OXO mandolin slicer)
2. Heat oil in skillet on medium heat
3. Once melted, add sliced onions and stir to coat
4. Let cook for 15-20 min, stirring occasionally until softened and slightly browned
5. Optional: remove from heat and stir in honey
