The Easy Way to…Make Cauliflower Rice
What you’ll need:
- 1 bag riced cauliflower (Trader Joe’s or Green Giant—or you can rice yourself but that’s not the easy way!)
- Microwave safe bowl
- Cheesecloth
- Large pot
- 2 T coconut oil
- ¾ c coconut cream (Thai Kitchen brand)
- Pinch of salt
1. Pour cauliflower into a bowl and microwave for 2 min
2. Stir and microwave for another minute or until no longer frozen
3. Lay large piece of cheesecloth out on counter and pour cauliflower onto the center
4. Pull the sides up to create a little sack and squeeze out excess water over sink; keep squeezing until most of liquid is out
5. Melt coconut oil to pot over medium heat
6. Add cauliflower rice to pot and stir
7. Add coconut cream and salt, stir to combine, let cook for 10 min or until cooked and liquid mostly absorbed, stirring occasionally as it cooks
8. Can be kept on stove on low while you prepare remainder of meal
