The Easy Way to…Cook Spaghetti Squash (2 ways!)
What you’ll need:
- Spaghetti squash (usually by the sweet potatoes and onions at the grocery store)
- Sharp knife
- Foil, baking sheet, and olive oil (oven method) or glass baking dish and water (microwave method)
1. Wash and dry spaghetti squash
2. Place in microwave for 1 -2 min to soften slightly (makes cutting easier)
3. Place on cutting board and carefully cut ends off
4. Stand squash upright on one of the now flat ends and cut in half lengthwise

- Preheat oven to 400 degrees and line a baking sheet with foil
- Drizzle olive oil on baking sheet and rub cut side of squash in oil then lay cut side down on baking sheet
- Bake for 35-45 min or until cooked through and lightly browned on the outside
6. For the microwave method:
- Place one half cut side down in glass dish
- Fill with 1 inch water and microwave for 13 min or until tender
- Repeat with other half
- Place one half cut side down in glass dish
- Fill with 1 inch water and microwave for 13 min or until tender
- Repeat with other half
7. Use tongs to flip and move to cutting board
8. Once cool enough to touch, scoop out seeds and discard then use a fork to pull out strands of flesh
